Red hue liquor, honey, nutty, astringency
Taste & Flavor Profile
Golden Needle is very attractive because of its needle-like shape and golden colour. It has a remarkable sweet honey like note with a nutty dry feel in the finish (a peculiar chestnut finish may also lead to a sweet astringency). The aromas resemble cocoa or chocolate. This could be due to a low amount of pigments or chlorophyll in the buds.
Picking
The buds are hand-picked or separated from secondary laterals from bushes those are pruned halfway through the stems, during the winter months. After the first order laterals are tipped or picked for silver needles, the bushes produce a Specialty Teas lavish and fresh yellow vegetation during the summer. The buds appear to be shiny and lush in the field itself, allowing to be plucked at the advent of its pubescence. Long sunny light hours contribute to better quality and brighter appearance. These buds attain a body if carefully picked from fields grown in southern aspects.
Processing
Least processed, slightly fermented buds
